Structure
The consistency of a wine when it is savoured in the mouth. A wine with a good structure is one that demonstrates a powerful balance between good alcohol content, a full texture, its tannins and its clean and elegant acidity. A wine without structure is one that seems dull, has no acidity or tannins, and is soft. In other words, as if it were a broth incapable of aging.
